This is such an easy, gooey, sweet cake. For a last-minute effort:

The cake is quite spongy and the topping is fudgy. Reminded me of sticky toffee pudding, but it is so so simple.

Mandarin Orange Cake

1 cup flour

1 cup sugar

1 small can mandarin oranges drained

1 egg

1 tsp. vanilla

1 tsp. baking soda

1/2 tsp. salt

Put all ingredients into a bowl, mix on med. high for 3 min.

Bake in a 350 oven in an 8x8 pan for about 30 min. Sometimes a little longer, till the centre is springy!

Topping:

3 T. butter

3 T. cream (half and half is fine)

3/4 cup brown sugar

Boil for 2 min.

Once cake is out of the oven, poke holes in the top with a fork and pour the topping onto it and let it all cool if you can. Serve with whipped cream, or not.

 
Marge, I have this in the oven, but all the recipes I find for this say NOT to drain the oranges.

I looked online because it is very similar to a pineapple cake I make and I thought it needed the liquid. The one I'm making uses the juice, plus adds nuts and coconut to the topping.

 
Melissa, hope all is well in your part of Dallas! was your cake a 9X13? that might need more

liquid than this 8X8 cake.

 
No. 8x8 and it is almost exactly the same cake as a pineapple one i make that says don't drain.

The liquid from the fruit is all there is except for the egg.
