This is the best example I've seen on how to cut up a whole chicken!

Very good indeed. When I was a kid we had fried chicken almost every day during the summer. It was

my job to pluck and sometimes cut up the chickens. It took 2 to feed our family. And sometimes we did extra for the freezer. We always cut the breast into 3 pieces, one piece being the wishbone. You have no idea how strong freshly killed, non-chilled chicken smells. To this day, I don't like handling raw chicken.

 
one of our oldest restaurants(50 yrs, same family) the Lucky Wishbone serves that wishbone piece as

one of their pieces. they are famous for it. their chicken is flown in everyday, free range and made to order. sooooo good. I loved your childhood story----can't balme you for not liking raw chicken now!

 
My grandmother always cooked the wishbone as a piece

and cut the breast pieces in half so there were 5 breast pieces. I can't find a butcher who knows how to cut it up that way. I do it myself though on the rare occasion that I fry chicken.

No matter how bad it smelled, sure musta been the best fried chicken! I can only dream of chicken that fresh!

Gotta figure out how you guys are cutting that wishbone piece. Do you cut a v-shape at the top of the breast? Then cut it in half? Would you still remove the breastbone?

Yes, basically that's it. You cut straight down at the top of that rounded

keel bone and then cut back toward the neck along the bones below your knife. When you get resistance, you can pull the wish bone piece of meat up and cut it free at the ends. I hope this makes sense.

We didn't cut the remaining breast pieces in two because the chickens were pretty small. I wish I could have it again, it was good. We always had the chicken pan fried with gravy for mashed potatoes.
