This is what I made and it turned out pretty good.

Flounder with Thai Scallion Sauce

I sauteed maybe a half pound of raw shrimp, that I cut into large chunks. Mixed in some cooked brown rice, scallions and garlic. I added an egg to bind it, then put the stuffing on the flounder filets and rolled them up. I placed them seam side down, on top of a bed of cooked brown rice. After I was done stuffing the flounder, i placed the remaining stuffing on top of the brown rice showing between the flounder filets. Poured about 1/4 cup of the Thai Scallion Sauce over each filet, and saved remaining sauce to pass around. Sprinkled with some green onion and baked in a 375 degree oven until the fish was just cooked. Let it set for a couple minutes then served with additional brown rice for those who wanted some, along with the sauce. I doctored up the sauce a bit with some mirin, oyster sauce and black bean sauce. It was really good and we figured it to be about 6-7 points.
