No wonder fine dining costs so much. Anyone else watch Chef's Table on Netflix?

It is a wonderful documentary and so beautiful, and most of the chef's food are highly orchestrated and multiple ingredients like these dishes. They sort of scare me, like I would feel bad to mess up the plate to eat them, and, of course, there is the cost of this 1/2 cup of food!! Reminds me of the start of California Cuisine, where after a hugely expensive dinner I'd go home and have a sandwich!!

 
I know what you mean about "foo-foo" I really tried hard for a period of time to do that

and found it too stressful, silly for my lifestyle, and learned that my thing is lots of pretty colors, fresh food at its finest, and simple preparation, most times. I don't mind learning a new technique, or method, but now keeping it simple in my way.

 
My sister had the "Broken Heart" dessert at Alma last week. Said it was beautiful and

delicious. I would never attempt one of these but I think it's fun in a restaurant.

 
I admire the artistry, but most of the time I want to look at the dish, but not eat it! I call that

type of concept 'tweezer' food. The tools those chefs work with are very different, and always require tweezers to plate the delicate blossoms, etc.

 
Not the type of food I crave or look forward to either....

... molecular gastronomy is a typical example of stuff that I find "interesting" but not too appealing. I cannot imagine someone 20 years from now talking with intense nostalgia about "grandma's egg foam"

the food that touches hearts is for the most part simple, straightforward, plainly delicious

having said that, of course I enjoyed looking at the link and marveling at the skill of the chefs. Pretty amazing productions!

 
The mango dish...maybe. Everything else would make me feel bad to pay for it. Especially

that micro-circle of slaw.
