This looked good: Leek and Pancetta Potato Rosti

This looks so tasty... always looking for leek recipes. I love the aroma when they are cooking

Do the refrigerated hash browns taste as good as the fresh potato? That sure would save a huge step in the making of the dish.

 
I never actually use them as hash browns - I've only used them in latkes

and everyone was amazed at how crispy they were. They are much 'drier' than potatoes that are shredded by hand and they don't turn brown (I'm assuming via the addition of some preservative).
