I once got a chance to see their operation. In the walk-in cooler, they had hanging shoe rack (looks like a garmet bag) filled with sauces in squeeze bottles. This is the kind of thing I imagined would be in a chefs treasure trove. smileys/smile.gif

 
Yikes! What a great idea. I have a vision of one of the old-style shoe thingies that

hung on the inside of a closet door. All those pockets filled with bottles, carefully labelled on the pouches.
