Can you believe this....

I did not eat a fresh garlic until I was 16. That's 44 years ago. Sometimes, I just don't know how I survived that youth.

I was thinking about garlic last night as I was slowly simmering some in butter, for potatoes. It reminded me of escargot. Is the only redeeming factor of escargot, that it is a good excuse to load on the garlic? On their own, the snails stink, I think.

 
Haha! In general, I try to stay away from meat, especially stuff with nitrites and nitrates in it.

Also, I find sausage too salty, but I've never tried the homemade stuff - maybe it's less salty.

Since I eat vegetarian around 85% of the time, when I do eat "flesh," it's usually fish or chicken breasts, and a filet mignon a few times a year.

Oh well, at least I have 2 out of the three!

 
You're right - I would try it without the meat, and add some smoked paprika and other spices.

 
Missy, our breakfast sausage is quarter parts onion/apple/chicken breast/pork.

Caramelized onions are added to sauteed apples, we grind our own whole chicken breasts and pork, then add Emeril's spices.

Tasty and ~1.5 WW points per sausage pattie.

 
Meryl, now that we know that chocolate is good for you, you'll outlive us all. Still,

I just could never give up sausage.

Fresh breakfast or Italian sausages don't have nitrates or nitrites as far as I know. It's cured meats that have them.

 
Joe, that's good to know about the Italian and fresh breakfast sausages being free of nitrites and

nitrates. Don't tell my husband, though - he loves sausages and hasn't eaten them since he met me (eons ago)!

Edited to add: I just told him. I can't hide anything from him!

 
Don't take my word for it! Commercial sausage might include them, but homemade

is just ground pork, salt, and spices.

I know that cured smoked meats are bad for me but I don't want to live in a world without them.

 
I don't blame you - I used to love the hot pastrami on rye at the Carnegie Deli

in NY, and I never could order pizza without pepperoni. Ah, those were the good ol' days. I can smell the aroma now. Joe, you're killing me - now you're making me crave cured, smoked meats!!!! You are evil!

 
quick meryl, grab your favorite stainless steel pot and place on head. might work better than foil.
