Melitzanes Papoutsakia (Stuffed Eggplant) I copied it, but wanted some input. I liked the idea of stuffed eggplant with cheese, tomato, eggplant and ground beef. But it looks like it has no other seasoning except salt and pepper to taste. And what about the cheese,kefalotyri? Does anyone know anything about it? The pecorino he suggests as an alternative, is that pecorino romano? I've only seen that grated (clearly I'm a cheese neophyte).
