This looks so good: Slow Cooker, Apple Cinnamon Steel-Cut Oatmeal how could I do this w/o a crockpot

I don't own a crockpot, though this looks good enough to make me almost want to go buy one, but is there some way one might make this without one? Anyone know how to convert crockpot recipes?

Slow Cooker, Apple Cinnamon Steel-Cut Oatmeal

Servings: 7 (3/4-cup) servings

Ingredients

2 apples, peeled, cored, cut into 1/2-inch pieces (2-1/2 to 3 cups chopped)

1-1/2 cups fat-free milk (or substitute non-diary alternative like almond milk)

1-1/2 cups water

1 cup uncooked steel-cut oats

2 tablespoons brown sugar (or substitute maple syrup or other desired sweetener)

1-1/2 tablespoons butter, cut into 5-6 pieces (optional)

1/2 teaspoon cinnamon

1 tablespoon ground flax seed

1/4 teaspoon salt

Optional garnishes: chopped nuts, raisins, maple syrup, additional milk or butter

Directions

Coat inside of 3-1/2 quart (or larger) slow cooker with cooking spray. Add all ingredients (except optional toppings) to slow cooker. Stir, cover, and cook on low for approx. 7 hours (slow cooker times can vary). Spoon oatmeal into bowls; add optional toppings, if desired. Store leftovers in refrigerator. Freezes well.

To reheat single servings: Put 1-cup cooked oatmeal in microwave proof bowl. Add 1/3 cup fat-free milk. Microwave on high for 1 minute; stir. Continue cooking for another minute, or until hot.

Recipe can be doubled in 6-quart or larger slow cooker. Increase cooking time 1 hour.

There's an overnight soak method for steel-cut oats. And I usually just chop and sautee apples

in a saucepan with brown sugar and butter, the morning of, if I want to add 'em to the oats. Takes about ten minutes, tops. (I think the oats take nine minutes--it says on the can, but not on their site.)

No problem. This is how I make steel-cut oats all the time. It will take about 40 minutes

on top of the stove. I used 1:4 ratio of oats:liquid, so that may be why mine takes longer to cook down.

1. Brown off the oats with a TBL of butter. This will take 5-10 minutes, stirring constantly so they don't burn. A good tip (not mine) is to keep a tsp of the raw oats off to the side while you toast them. They should end up 2 shades darker, so use the tsp full to have a visual. Stir constantly with a wooden spoon or silicon spatula and toast slowly so they don't burn.

2. I like to warm up the liquid (almond milk, milk, water, etc) first in the microwave to give it all a head start.

3. Cook on stove top for 30-40 minutes. Meanwhile saute apples. When done, add the apples and the seasonings.
Stores for a week in the frig. I dole it out into 6 oz servings for Lar and I to microwave during the week.

4. If you do have a large crockpot, try this water-bath method: Pour the oat/liquid mixture in a glass container (I use a smaller 1.5 QT crockpot and cover with SaranWrap. Set that inside a larger 5 QT crockpot and fill with hot water. Cover the entire surface with SaranWrap. Set on low and let it cook overnight. This water-bath method keeps the oats from baking against the side.
