Michael, just curious - what's the benefit of doing it in a pan, as opposed to roasting it?

 
I would imagine it is a time factor, as well as not heating up an oven...

...when a skillet will do.

It was 102 here today... reason enough not to fire up the oven!

I love the variations they suggest on the basic recipe. I hope it will help me to make use of the odds and ends that clutter my fridge from time to time.

I alway choose stove top over oven when I can. Maybe it's because I have to

remove 4 cast iron skillets and a small wok which I store there!LOL

my neighbor didn't mow over, thinking he was doing me a favor by "getting that clump of grass you missed"! ;o)
