shrimp. I'm making an Indonesian dish for dinner tonight. When I shelled and deveined there was a yellow orange substance where I cut the shell. Kind of over the vein.

What is it?

 
I don't know exactly what it is but I always rinse it out. My Thai friends

say I'm crazy. They love it! But hey, they love deep fried chicken feet and a variety of fried bugs that I just could never give a try. ;0)
