This Reads Amazing - Chef Mindy Segal - Hook's Wis. Blue Cheese Cheesecake w/Port Wine Poached +

I had to keep looking at this and finally decided I would like it.

When I saw the caramel sauce I was thinking too sweet until I realized the cake itself is not sweetened.

 
I must make this. Bought a chunk of Hook's Blue Cheese last fall, right from the dairy....

it is wonderful blue cheese. DH and I went of a cheese and beer trour of southwest Wisconsin last fall. Stopped at Hook's _ Mr & Mrs were cleaning the vats. Their Cheddar and "Prima Donna" are outstanding. Prima Donna -flavor similar to Parm, with those little crystals, with a soft somewhat crumbly texture.
