This salad was a real hit ...........Mache Salad with Creole Vinaigrette

MACHE SALAD WITH CREOLE VINAIGRETTE

Mâche is sold in different ways — sometimes it comes in a package with soil plugs attached and sometimes you can find it loose, like mesclun. If you're buying it with plugs attached, you'll need 1 1/2 pounds; if you're buying it loose, you'll need 5 ounces.

1 yolk from a large hard-boiled egg

2 3/4 teaspoons white-wine vinegar

1 teaspoon Dijon mustard

1/4 teaspoon salt

1/8 teaspoon black pepper

1/4 cup olive oil

16 cups loosely packed mâche (lamb's lettuce; see above)

Crumble yolk into a blender, then add vinegar, mustard, salt, and pepper and blend until combined well. With motor running, add oil in a slow stream, blending until combined well.

Toss mâche with vinaigrette just before serving.

Cooks' note:

Vinaigrette can be made 1 day ahead and chilled, covered. Bring to room temperature, then whisk until combined well.

Makes 10 servings.

How I envy you. My sister is visiting in Santa Monica and just called and told me what's available

at the farmer's markets. She said you can smell the berries even before you get there. Mache...if I asked for it locally they'd give me a blank stare. I'm also still looking at about a foot of snow that the cold rain today hasn't melted.

Can you tell that I'm not in my happy place today?

 
She's about 15 min. north of my house. Santa Monica is famous for that market.

I'm sure she's having a great time now with the nice weather!

 
Cyn, if you ask for "lamb's lettuce," it's the same thing. It's easy to grow, though I don't know

what season would be best for you. I love mache and I've had good luck growing it in winter here.

(I'm jealous of your snow.)

you can plant your mache to enjoy as you like.

Grrrrrrrrrrrrrrrrr! Made the salad to have with dinner tonight. DH offered to ................

the kitchen clean up. Just as I was going to tell him to put the left over dressing into a container he was busily pouring it down the sink. Reminds me of the time he got rid of leftover turkey gravy in the bottom of the roaster. He won't do that again either. LOL!

 
Lol! Been there, done that. In our case it was the drippings from a turkey. Believe me, he now

asks before he throws anything away. Bless his heart, he's my cleaner-upper, I don't know what I'd do without him.
