The basic recipe is called Palace Court Salad, but it also is known as Palm Court Salad, Garden Court Salad, San Francisco Bay aRtichoke Salad and other names.
This is my version.
To serve one:
Shredded red leaf lettuce
Sliced tomatoes
3 artichoke bottoms (marinated or unmarinated)
1 T. minced green onions (scallions)
1/4 c. cooked crabmeat
1/4 c. real mayonnaise
Garnishes: black olives or Greek olives
slices of hard-cooked egg
cooked julienne carrots
thinly sliced fresh fennel
Make a bed of the lettuce. Place sliced tomatoes on top, then the artichokes, leaving space in the center. Combine the crabmeat and mayonnaise. Mound the crabmeat in the center and surround with olives, egg, carrots, fennel - whatever you like! Another version substitutes chopped celery for the scallions. Sometimes I add a little chopped green pepper and a dash of curry powder to the crab. Wonderful for a summer luncheon... CYH - consider yourself hugged.
