well. The original recipe did not have coconut extract. I have the New England Soup Factory cookbook and it calls for 12 cups of vegetable stock, as many of their soup recipes call for. I have only used 6 cups and it is plenty. I do not cut back on the other ingredients at all.

I was not sure about this soup the first night but the next day it was better and now today for lunch it was even more flavorful.

I usually have more butternut squash that I have ideas for, so this will be added to the list.
