This was a winner: White Chocolate Peppermint Cheesecake

It came in a monthly magazine from our electric co-op and arrived last week with a batch of peppermint recipes and selecting a NC Christmas tree. think the magazine was a bit late being delivered.

Anyway, here it is: The recipe used a chocolate cookie crust, but I made one with Hob Nob oatmeal cookies. Mine really worked but I'm betting the chocolate one would too.

Crust:

3 Cups chocolate sandwich cookies

4 TBL butter

Make crumbs, melt butter, press into buttered 9" springform. Bake 350 for 8-10 minutes.

Lower temp to 325.

Filling:

32 oz cream cheese (4 pkg)

1.25 C sugar

3/4 C sour cream

6 oz white chocolate, melted

1 tsp vanilla

1 tsp peppermint extract

1/2 tsp sea salt

3 eggs, room temp

1/4 C crushed peppermint candies, plus topping

5 oz dark chocolate (optional)

Beat cream cheese, sugar and sour cream. Add melted chocolate, extracts, salt.

Mix eggs one at a time. Fold in 1/4 C crushed peppermint.

Bake 60-70 minutes.

The recipe just melts chocolate, but I made ganache with dark chocolate & heavy cream (1:1 ratio). Then I added more crushed peppermint.

My new computer is generating .HEIC images and I can't load them. Pity, because this was picture perfect.

oh, after 13,586 searches on macbook settings, I figured out how to fix that.

 
The recipe reads beautifully and your pic looks amazing! Unfortunately I'm not crazy with peppermint unless there's a thin layered slathered on both sides with chocolate:)
