This Week's (way-more-than) 6 ;)

What were you up to this week? smileys/smile.gif

I was "produce greedy" last weekend shopping on Friday and at the Farmer's Market on Sunday, and have been struggling all week to eat/process everything. Here's 6 (yes - not counting the 3 batches of muffins, 2 curly parsley-types, 4 pizzas, 2 muffaletta sandwiches, meatball-less minestrone, watermelon, peaches, etc.), And I still have 17 "more" on the list to process!

1)Last Friday, I scored 3 different tomato-on-the-vine clusters along with grape tomato Wonders. Yesterday, de-seeded and de-skinned. Roasted this morning - and the remaining zucchini, sliced, separately. Lasagna ahead smileys/wink.gif

2)Ended up with 2 dozen corn - from 3 sources - all cooked, some eaten and some sliced off and frozen!

3)Red kale, cleaned, deveined and in water yesterday. Need Caesar dressing but we're so looking forward to it smileys/smile.gif

4)4 medium beets - w/2 long-shaped (darker red but taste the same) - roasted, de-skinned and most are sliced, marinating in Famous Dave's Spicy Pickle brine. The remaining, diced and cued up for salad with balsamic dressing, goat cheese, pistachios. Lunch today???

5)A small Briami with 2 zucchini, sm eggplant, baby yellow potatoes, tomatoes, fresh mint from our driveway pot, spices and freshly harvested garlic toes - inhaled on the baguette toasts.

6)Spinach salads at lunch this week topped with Trader Joe's Bacon (their left-over-pieces) roasted and chopped fine, sliced mushrooms (still have over a pound in packages - one of the 17 smileys/wink.gif and water chestnuts, diced hardboiled eggs and Trader Joe's Fat Free Balsamic Dressing doctored with a bit of brown sugar, honey, dijon, finely chopped onion.
