This what's in the oven as I type.........Moon Cake aka Rhubarb Coffee Cake

thanks Sylvia. I'm picking my first stalks of rhubarb tonight and baking this.

I have a farewell dinner to go to tomorrow night for a bookclub friend moving to Sacramento to be nearer the grandkids, and I thought I might make them a small cake for the 2 of them to share for breakfast, and then some cupcakes for the other gals at the dinner. this will be the perfect recipe to send them off with a taste of Alaska rhubarb.

 
I have made this one too(love the clipping!). My cakes turned out great. just what I wanted

for handing out tonight. I made the topping more like a streusel with some flour and butter and cinnamon added. for the small round cake, I put some batter in, then some streusel, then more batter and topped with streusel. I used a small round souffle casserole dish, lined bottom with parchment. It took a bit long to bake, but came out of the pan beautifully. I made this round and also 8 muffins out of the one recipe. fun.
