Thomas Keller's Favorite Roast Chicken

I'm always looking for a better roast chicken recipe. I think this one is my new favorite - undeniably delicious! It's from a cookbook called "My Last Supper" where well-known chefs describe what they'd choose for a last meal. This chicken is worthy!

Just for fun I stuck a few sprigs of rosemary and parsley in the cavity but it would be delicious without it.

(edited to add): Keller's chicken usually makes one heck of a mess of the oven, but to me, it's soooo worth it. ;o)
