thoughts on "blast" frozen salmon

Hi - I am having a dinner party at the end of the month and have just found out that one of our guests is vegan. My initial plan (before I knew about the vegan) was to serve pork tenderloin with sweet potatoes puréed on the side. She has indicated that she eats fish so I'm thinking perhaps we will all eat salmon. However, salmon season is apparently over and the fish market tells me that they have "blasted" salmon. Which I understand means flash frozen. According to the owner of this market it's just as good if not better than fresh.

So my questions please - do people have any thoughts on frozen fish. This is a work dinner so I will be under a bit of stress anyway and would like to keep the dinner relatively simple if possible. I think I will serve coconut rice from Anne Lyndsey's Light cookbook as one of the sides. Soup will be roasted carrots and peppers; salad will be citrus with roasted beets.

The salmon that is frozen on the boat is probably fresher than what you get as

fresh. We live in a lovely retirement community with a culinary department that is equal to any top chef driven restaurant. We have at least 6 chefs plus other line cooks. We have salmon on the menu every day and it is absolutely top notch--and flash frozen.
