RECIPE: Thoughts on this rec: Mango Chutney posted by Durward. I was thinking of using the rec for peaches

RECIPE:
Not sure about fruit, but veggies that are soaked in salt

solution overnight before pickling are crisper than those that were not soaked.

 
Thoughts on peeling the peaches? I have seen recipes that specify peel, and others say not to. TIA

 
For chutney I always peel. And for jams also usually unless I use the recipe in

which the peaches are pureed..
I think if you don't peel, the pieces of peel will come off and just be that in the finished product.
