Blue Cheese Wafers

1 cup grated sharp cheddar cheese

1/2 cup softened butter

1/3 cup crumbled blue cheese

1+1/2 cups flour

1+1/2 tsp. seasoned salt

1/3 cup finely chopped walnuts

Mix cheese with butter. Add rest of ingredients. Shape into logs about 1+1/2 inches across. Chill. Slice about 1/4 inch thick. Arrange on ungreased baking sheet. Bake at 375 degrees F for about 10 minutes until firm. Makes about 6 dozen.

Cheese Crisps

1/2 cup softened butter

1 cup grated cheddar cheese

1 cup flour

1/2 tsp. salt

1/4 tsp. cayenne pepper

1 cup crisp rice cereal

1/4 cup finely chopped nuts, optional

Mix butter and cheese together. Whisk together the flour, salt and cayenne pepper. Combine the two mixtures. Add the rice cereal and nuts, if using. Mix.

Roll into small balls and place on ungreased baking sheet. Press with a fork. Bake at 350 degrees F. for 12 to 15 minutes until lightly browned. Makes about 48.

Cheddar Cheese Crackers

2 cups grated sharp cheddar cheese

2 cups flour

1/2 cup butter, softened

1 tsp. salt

1/4 tsp. paprika

1/4 tsp. cayenne pepper

1/2 cup water

Preheat oven to 425 degrees F.

Mix all ingredients and shape into rolls 1+1/2 inches in diameter. Wrap in waxed paper or parchment and chill for at least 2 hours. Cut into thin slices and place on ungreased baking sheet. Sprinkle with coarse salt. Press gently.

Bake for 5 minutes or until slightly browned. Makes 4 dozen.

Alternate toppings: brush with water & sprinkle with garlic salt, celery salt, or curry powder.

 
I made the Ceddar Chees Crackers and one similar to the

Blue cheese wafers. Couldn't find my original recipe for these. This may be the same, but won't know until I find the recipe card.

 
These, plus a bottle of wine, would make great housewarming gifts, I think. smileys/smile.gif I'm off to try!
