TJ's had a pre-packaged salad on demo yesterday. I don't usually buy those, but...

...this one was well worth it!

It is all in one bowl with a clear plastic clam shell lid.

Ingredients:

baby spinach base;

shredded carrot;

fresh edamame;

chickpeas;

shelled pumpkin seeds;

quinoa;

dried cranberries;

cherry tomatoes.

There was a little container of carrot/ginger/miso dressing with sesame oil that was fantastic!

That was a wonderful lunch! I'm going to make it at home next time. Shouldn't be too hard.

I was just there today - I'll have to look for that. It sounds well balanced and lots of protein.

Our beachside health food store sells those. They'll add shaved daikon radish. I usually have

to pull all the goodies off the top and dice them up a bit, then chop of the greens to make a more even distribution for Lar and I. Price keeps going up and up.

This sounds good - I also love their Vegetable & Grain Country Salad over Cabbage -

It is a cooked Bulgar base, with diced red peppers, cucumbers, chickpeas, and pearl tomatoes with a vinaigrette over a bed of shredded cabbage - very addicting!

I usually shred more cabbage, and then stir the salad into that. It stretches well, and the dressing is enough to coat nicely.

I wish they would sell some of those dressings. The flavors of some

of them are just fantastic. Will have to try the salad you mention.
