To check out: Cinnamon Roll Muffins

thanks Meryl. I made these today. very simple.

not my favorite tasting cinnamon rolls but definitely the easiest short of the Pilsbury exploding cans. I enjoyed them just saying that taste wise these didn't knock my socks off. And to be fair I didn't have buttermilk so made my own with vinegar and a milk. Perhaps some "real" buttermilk will improve the taste.
More importantly, the kids very much enjoyed.

Bottom line I will definitely keep this recipe and make again. (or better yet, it is simple enough that the kids can make it) Also going to try the biscuit version there.

well today we did Cinnamon Roll Muffins...

My daughter got a candy making kit for Christmas so we went from bread to raspberry Licorice ("epic fail") and then today made some really tasty home made Marshmallows.
Baking and candy making are very unforgiving in my book as compared to cooking. More science than art and kids don't always follow directions. So for example today's sugar/syrup mixture was supposed to have 1/2 cup of water but instead got 2 cups. So thankfully I caught that in time to remake the syrup as well as the 1 tbn gelatin 3 water instead of a full box of gelatin...

"Sugar is science" Amen to that. Along with my Nancy Drew books, I used to read my mom's

black and white cook books with pictures of how to test sugar at different stages.

I used to play with those manual test methods standing on a chair over the stove with a cup of ice water and bubbling sugar.

Amazing that my mother didn't get arrested for child endangerment.

hot sugar burns seem to be extra painful for some reason but

there are certainly some good life lessons to be learned in all of this, along the lines of persistence, attention to detail and the value of failures.

we made the biscuit version this evening

These came out really dense. I probably would not make these again - however they are very simple and quick to make. A lighter, flakier version I think would be very good. I'm not sophisticated enough though to figure out how to get there.

I will try this.

Perhaps the baking soda is the key. And actually the kids loved both versions so I may have spoke too soon. Yesterday I had more dental work so maybe I was a little extra sensitive to the "dense" thing. (and maybe a bit cranky too smileys/wink.gif

I made the biscuit version last Sunday, I didn't find them to be dense,

and they were almost flaky. I really liked the dough--so easy to work with. I cut them smaller--maybe that's why they weren't as dense? I wasn't paying attention to the instructions and added the melted butter to the sugar filling, so there was a little extra butter too. Not sure if that changed density at all.
I also used Splenda blend brown sugar, and didn't glaze them as DH is sugar challenged. smileys/smile.gif
