This looks good Meryl. I've been wanting a good veggie side for the BBQ...

...we like to do.

Pozole
Moyn's Mojo Chicken
Mexican Rice with crumbled creamy feta
Roasted corn on the cob with chile butter
Mexican corn bread
corn and flour tortillas

The beans would be a nice distraction, and it looks pretty as well.

I also saved it, looks yummy and pretty--with eastern Mexican and Caribbean dishes!

made it with some grilled salmon, did use feta, had lots, excellent!
