To Michael and everyone else who recommended blister peanuts: Thank you (I think)

I admit it...I caved. The mind was weak, the flesh was willing, and the Internet was available.

Since there are no Trader Joe's anywhere near (for which my thighs offer up silent blessings), I was forced to mailorder them fresh from a peanut farm.

They arrived last night.

The box was sitting there--unopened--when I got home from this week's weight-in at WW. I was slightly depressed because I'd only dropped 2/10 of a pound this week....far off my goal-to-myself to lose at least one pound a week.

Now, quite possibly, if I hadn't made (read: Sampled. A lot of) a double batch of the Blue Chip pecan chocolate chip cookies and the double test batch of Alice Medrich's fudge brownies with DiSarrano-marinated apricots this week, I might have lost a tad more.

But there you have it. My never-ending conflict between baking, sampling, and weight control...my personal demon, my culinary Ménage à trois. I fear duct tape is the last resort.

But back to the peanuts. I love peanuts. Let me rephrase that with optional HTML text...I LOVE peanuts!! And quite possibly, I love even more their seductive sibling, peanut butter. I won't even go into my issues with the 8th Deadly Sin: Peanut Butter and Chocolate.

I tried NOT to see all the peanut butter recipes recently posted. But the physical evidence was sitting there on my kitchen counter: a large jar of blister peanuts, fresh from the farm. Any first-year rookie cop could have seen I was guilty.

So I would like you all to know that I got out the digital scale, measured EXACTLY ONE OUNCE of those little beauties and dutifully logged in the points--four of them, to be exact.

As Coroner, I do concur,

I thoroughly examined her

And she's not only merely plump

She's really most sincerely plump.

I will be making Michael's CI peanut butter cookies some time this weekend. Duct tape will be involved. The resulting cookies, of which I'm sure will be delicious, will be donated to the library staff. I plan to save 2 of them for myself and two for Lar.

I ask only that you keep me in your thoughts and prayers this weekend. I suspect I'll need all the help I can get.

 
oh my, good luck with avoiding those cookies. have you seen the Reese's commercial with the jar of

pnut butter and the chocolate bunny, slowly coming towards each other, then BAM, we have little choc/pnut butter eggs. I chuckled.

 
My favorite, currently, is the Dairy Queen "They Were Made For Each Other" commercials.

When she (the soft serve) borrows the chocolate syrup from him (the waffle bowl), and he asks her what she's gonna do with the sauce...

Gotta love his reaction!

Okie, dokie, this one's a winner for us. Peanuty, crunchy...rings all the right bells.

I did make a few minor adjustments due to...well, my inability to read directions.

I had bought creamy JIF (not the specified extra crunchy type), so I added an extra 1/2 cup of blister peanuts in the final mix. I also have a jar of powdered PB2 sitting in the closet, so I tossed in 2 TBL to up the peanutiness.

Instead of rolling each cookie (which would inevitably lead to sneaking unconscious calories) I conscripted Lar and he doled them out, using a #40 (purple) scoop. We ended up with 52 cookies instead of 36. These puppies are a perfect 3" by 3/8" thick, each tray taking about 12 to 13 minutes to bake in a preheated oven.

And, most astoundingly, I thoroughly enjoyed ONE single, delightful cookie. Haven't figured out the points yet, but the mere fact that I went through a baking exercise and didn't over-eat practically stuns me, considering the fact that, you know, I know me.

Three dozen are boxed and ready for the library, we reserved 2 more cookies for us and the rest are coming in to work.

Now I'm off to go figure out the points. I'm thinking they'll be high--will report back with the data.

3 points per cookie made the way I did (extra peanuts) but more cookies per batch (52 cookies).

or

5 points per cookie if you follow the recipe to the letter and make 36 cookies.
