Who knew it would be so easy! All I had to do was prep the ingredients, pop them in the bread machine pan and push a few buttons. I used the red pepper for color - the chutney is so pretty, and not too spicy.
Recipe: Mango Chutney
3/4 cups apple cider vinegar
1/4 cup lime juice
1 tsp salt
1/2 cup granulated sugar
1/4 cup finely chopped onion
2 tablespoons grated fresh ginger
1/2 cup red or green sweet pepper
1/2 tablespoon mustard seeds
2 large mangoes (I used Adolpho) small dice
10 dried apricots, diced
1/4 tsp dried red pepper flakes
For the bread machine, add ingredients to the bread pan in the order listed. Secure the bread pan and choose the "jam" setting.
On the stove, I would just follow a good jam recipe for times and stirring instructions.
One recipe actually makes only enough for 3 of the 6 ounce jars. I made two batches to have enough to process in the water bath. The recipe was in the cookbook that came with the machine!
I love the machine -- it is noisy, though.
