Stores have been running good deals on dairy and eggs, so I pulled out all the bready carbs from my freezer (brioche rolls, waffles, mini naan breads and shortbread; ix-nayed the jalapeno cheddar.) Broke it up and baked at 350 for 15 minutes to dry out. Measured and had 10 cups.
Used 10 eggs + 4 Cups of whole milk + 1.5 C of heavy cream + 2 cups sugar + cinnamon + golden raisins + vanilla + sautéed diced apple + stick of butter + 1/4 C of my caramel. Warmed milk with sugar and used it to temper eggs, then let the whole mess soak for an hour to saturate the dry bread. Buttered 9x13" pan (used two disposable aluminum pans since it was heavy.)
Baked 45-50 minutes at 350...I checked at 45 and the toothpick was a tad damp. Pudding was completely risen by the time I pulled it out and then flattened. It was still warm by the time I got it to the homeless shelter.
I gave the kitchen coordinator my list of ingredients, but warned her it was not a dish for strict diabetics.
