Tomato, Fennel and Black Bean Salad

serves 6

INGREDIENTS:

3 ripe tomatoes, chopped coarsely and drained

1 medium bulb fennel, chopped coarsely - reserve some leaves for garnish

1 15 oz. can of black beans, rinsed and drained

1/4 cup sweet onion, minced

1 tsp. dried oregano or substitute fresh to taste

3 tbs. balsamic vinegar

2 tbs. olive oil

PREPARATION:

Mix ingredients.

Chill.

Garnish with sprigs of fennel leaves.
