Green Rice is done .....

The beans and rice taste so good. I have never made green rice with so many steps that were new to me. Boiling water is poured over the rice for 20 minutes and the rice sits. The rice is browned with shallots and then the green sauce is poured into the rice and cooked. Very different than the ones I have made in the past. It is excellent. Only tweak I did was to use Anaheim peppers to substitute for the poblanos as I had them in the fridge and they needed to be used. Pork will be put onto skewers tonight and grilled. Will report back on how Sally's recipes all came together for our dinner.

 
Our dinner was delicious....loved the rice, it was the first green rice I have made that

has you cook the green sauce with the rice. Surprisingly, it tasted very fresh and had just the right amount of heat from the Anaheim peppers I substituted for the poblano. I also made the Pickled Red Onions (from another site) to go along with the dinner. These onions are amazing and we love them for sandwiches, salads, on scrambled eggs and over beans.
I put them into a glass container and keep them in the fridge. We usually use them up within two weeks, if that long. The resulting color from the brine is amazing.
