In today's mail we received a wine magazine with an insert called "Uncork New York!" Ian went through the insert and found a couple of recipes. He showed one to me and said, "If I was Prince Charles I'd order this for tonight's dinner." I looked at the recipe and thought, "A no brainer." Ian was quite surprised when the dish was placed before him.

I've made more complex sauces in my time but this was a quick and easy one to do for a mid week dinner.
