Too hot to cook so my husband has grill duty. Grilled tilapia with mango salsa was FABULOUS!

I just sat outside with him near the grill (gas grill, so not that bad) and I started to drip. I love my air conditioning and my pool! But the tilapia was really good, so good that I ate the delicious salsa separately so that it wouldn't spoil the taste of the fish.

One good thing about DD being vegetarian -we can eat fish every night if we want. Last year she complained about eating too much tilapia. She eats out side dishes (we often have beans etc so she has the protein) or she cooks for herself.

However, now I must put the oven on for kittycat's liver, as he is complaining about eating only canned and dry food. Those reproachful blue eyes have convinced me that it is necessary.

I don't care for tilapia, but this sounds great. Wish I could get some good mangoes here - I'd use

this recipe for another type of fish. All the mangoes here are from Mexico or Brazil, and they suck. I used to get great local mangoes when I lived in FL!

 
Lana, use your gas grill as the oven. It's really the same if you can

light burners on one side and put your food on the other side. I do almost everything outside.
