Traca, I just made this and it is AMAZING!

YAY! I'm smitten with this dish. Those tomatoes...I can't stop eating them! So glad you tried it.

 
A warning about the tomato mix: The cherry tomatoes I used had a warning on the lid...

...which said "DO NOT REFRIGERATE" them**. So after I mixed it up and we thoroughly enjoyed the crostinis, I put the feta mix in the refrigerator, but left the tomato mix out.

Two days later, I decided to make us a few more appetizers and opened the container with the tomato topping. It was fermenting! Just a bubbly mass of white...something churning around that delightful mixture.

It was ALIVE!!!

I'm pretty sure if I knew a curse, I could have used the stuff in that jar to invoke evil spirits and doom someone forever.

I made this 3 times in the last 2 weeks, but I roasted the tomatoes. I recommend trying it this way

I roasted them with a good slurp of olive oil, garlic, onion, salt pepper and 1 T balsamic vinegar. Poured it over the cheese. Requests for recipe each time I served it

 
I don't refrigerate whole tomatoes, but once they are cut I do store in the fridge. It does

have an effect on the flavor, but it is tolerable.
