be something your client might like? It's a Food and Wine magazine recipe that sounds really good to me. I find the meaty texture of mushrooms to be a very satisfying vegetarian main course.

This blogger, The Chefs Apprentice, wrote about the recipe here:

I like the sound of her accompanying couscous with garbanzo beans.

Mushroom Kufteh with Green Harissa and Asparagus Pesto

This looks great! Thanks for the tips Pat. They're not vegetarian but they are looking

to bump up their veg intake. She's a nurse and her hubs is in high tech. They brought me on as an alternative to eating out regularly, and with the goal of being more healthy. Hubs seems a bit resistant, but will eat food that is ready. They cleared out the fridge and pantry. Better alternatives? Ball is in my court!

My first menu for A & J. Emphasis on the veg.

Entrees
- Veracruz-style Baked Fish
- Adobo-Rubbed Chicken Steamed in Parchment
- Grilled Vietnamese Lemongrass Pork
- Rolled Flank Steak
- Korean Chicken

Sides
- Slow Simmered Mexican Black Beans
- Fresh Corn Salad
- Mexican Green Rice
- Green Beans with Marinated Cherry Tomatoes
- Spicy Cabbage Salad

Sounds wonderful! A win-win for both of you.

You get to play in the kitchen and use your creativity and they get delicious healthy meals. Niiiiice!
