Traipsing through Harrod's today, I bought a small jar of black Italian summer truffles

The jar says that they should be used within a week of opening.

I'm not sure I want to use them up that quickly. Does anyone have ideas on how to make the. last longer?

Also, any and all recipes using them would be appreciated.

 
Once I bought fresh truffles and put one in a jar of arborio rice.You can also make your own truffle

butter and freeze it, I have that great big (now dwindling) log from D'Artagnan. There are uses for the truffle juice, you might do a quick search on that...
