A huge fundraiser for a group I belong to was a success. We fed 91 patrons dinner, and dessert at intermission. Food was excellent. My contribution was a wonderful shrimp and crab salad and I was worried about keeping it cold. I transported (very cold) in a huge salad bowl sunk into a larger bowl filled with shaved ice. At serving time, I took it off the ice. After we served our patrons, I put it back on ice, took it to my car and there is slept until we safely took what was left (not much) home to the refer. Frankly, I was not worried about the food staying safe, but you know how some folks are, rightly so, and I did not want to be the topic of any conversation regarding food safety. Our fundraiser was a complete success. Thanks again for your suggestions.
