I make Apple Walnut Bread several times a year...
The apple flavour depends, of course, on what kind of apples you use.
Makes 2 loaves.
3 eggs
2 cups sugar
1 cup oil
2 cups shredded unpeeled apple
1 tsp vanilla
3 cups all-purpose flour
1 tsp salt
1 tsp baking soda
1/2 tsp baking powder
2 tsp cinnamon
1 cup coarsely chopped walnuts
Preheat oven to 325. Line 2 loaf pans with oiled parchment (or wax paper).
Mix eggs and sugar until light and creamy. Add oil and beat 1 minute. Add apples and vanilla; beat for 5 seconds. Add flour, salt, baking soda, baking powder, cinnamon. Beat until smooth. Stir in walnuts.
Turn into pans and bake for 1 hour. Let sit on racks 5 minutes before unmoulding.
