Try again: Is this food combo wierd? (more)

I love baked sweet potato "fries" and made some last night. Peeled and cut into thick strips, tossed with some of a couple of curry powder (Sadaf brand currey powder, Penzey's Rogan Josh seasoning and Penzey's garam masala), then mixed the lot with 2 tablespoons oil, placed evenly on a baking sheet, cooked at 400º F for a bit over an hour, stirring a couple of times.

I pulled them out and weighed what I wanted. I needed some protein and since I had some almond butter in the fridge, I weighed this out and then proceeded to painstakingly (read "anal retentively') spread the almond butter in glops on each piece of sweet potato. (the "fries were too soft to be dipping into the AB)

It was delicious and very satisfying, rich and very flavorful and creamy, something I will be having again, 'cuz I have leftover cold sweet potato "fries" in the fridge.

Is this a wierd food combo to you?

One of my favorite dips combines sweet potatoes, almonds, and chipotle. Added benefit - it's healthy, especially when apple slices are the dippers.

Spicy Sweet Potato Dip
Adapted from a recipe by J.M. Hirsch, The Associated Press (makes 3½ cups)
2 large sweet potatoes
¾ cup toasted almonds (115g blanched, toasted)
1 chipotle pepper in adobo, or to taste (1TB puree)
2-3 cloves of garlic
2 TB lemon or lime juice
1 tsp smoked paprika
1 tsp ground toasted cumin
¼ cup olive oil
1 tsp salt or to taste and pepper to taste
Roast the potatoes in their skins until well done. Allow to cool. Scoop the cooked potato flesh from the skins and combine in a food processor with all ingredients except olive oil and salt and pepper. Process until combined and then add olive oil while processor is running – process until smooth. Season with salt and pepper to taste.
Can be refrigerated for 24 hours and brought to room temp to serve. It can sit out for hours at room temp without losing anything in the way of appearance or flavor.
Serve with raw vegetables and/or assorted dipping chips.
