Trying to eat more veg. Cauliflower rice is a revelation.

Basically you take a whole head of cauliflower and blitz it in the food processor. You can cook it in a pan, or I added a touch of water, covered the dish and steamed it for a few minutes. Having a canister of the cauliflower prepped and ready in the fridge has been great. This morning I had a leftover veg dish from Ottolenghi, topped it over cauliflower rice and added a couple poached eggs. Depending how far you cook the 'rice', it also has a bit of texture like a chopped nut. .... I make cauli-rice pretty much all the time, at least once a week

of all the methods I tried, this one became my favorite because the texture is perfect -

I particularly love the subtle taste of the coconut oil, but you could go for olive oil if you prefer. The trick is the oven instead of steaming or sauteeing

I often process a large head of cauliflower, freeze raw in small amounts and proceed from freezer to baking - it defrosts pretty quickly, I freeze it laying flat instead of in a bulky shape.

Hmmm.... Sounds good! My mom was describing a cauliflower dish she had this past weekend..

It was a buffalo roasted cauliflower dish. I was going to do some research, as I think it may be a hit here. Thanks for posting the rice idea!

Barb's mention of Buffalo cauliflower jogged a memory of seeing a recipe recently. I also subscribe

to a lot of food magazines. Does it ring a bell with you? Although it could have been on one of the many blogs I follow. I remember the picture of the cauliflower and it was orangey colored.

new again and the buffalo cauliflower was linked under the hungry for more? option.
