Tube pan volume Question

Hi all:

I have a recipe that I have made in a large tube pan that does not rise as high as I would like it. It is about half the height of the pan but is the perfect texture and taste.

My question is this.....can I double the recipe and cook it longer in the same pan.

It calls for 2c flour

2/3c oil

1c sugar

2 egs

1c milk

1-1/2c fruit

1t salt

2t baking powder

1t vanilla

Cooked for 60 -70 minutes on 325.

well the only way to be sure would be to

measure how many cups a recipe makes and how many the pan holds.

However it doesn't look like you have any really expensive ingredients so why not double the rec. and if the pan does not hold it all you can make a couple cup cakes.

Doubled the recipe(more)

Hi DarylGA:

I doubled the recipe and baked it for 95 minutes.
It appeared to be done with the crumb test.
I do think I will reduce the oil a bit and bake about 10 to 20 minutes longer next time.
It did fit in the tube pan ....about 2/3 full.
It tasted great but the bottom 1/4ish was a bit gummy. I guess undercooked??
