I used Lamb! Not into turkey, but fyi the reviews were raves on the turkey as well. I added harissa paste to the mix to spice it up

Turkey Spanakopita Burger Recipe

Ingredients

2 tablespoons extra-virgin olive oil, plus some for drizzling (didn't add any extra)

2 garlic cloves, chopped

1/2 red onion or sweet onion, chopped

1 (10 ounce) box frozen spinach, defrosted (or fresh spinach) (chopped)

1 tablespoon fresh oregano (dried will work)

1/2 cup goat feta, crumbles or dry curd cottage cheese (DCCC)

1 lb ground chicken or ground turkey

salt to taste

pepper to taste

paprika to taste (didn't use)

Directions

Heat a large skillet over medium heat with a tablespoon of olive oil.

Add the chopped garlic and chopped red onion and cook for 5 minutes. Transfer the onions and garlic to a bowl to cool.

Return pan to heat.

Squeeze all the water out of the thawed spinach.

Separate the spinach as you add it to the bowl with cooled onions and garlic, then season with oregano.

Add in feta crumbles then chicken or turkey and a drizzle of olive oil. (didn't use olive oil, enough fat in lamb)

Mix and form into 4 patties, 1-inch thick.

Raise heat on pan to medium-high with another tablespoon of olive oil.

Add patties and cook 6 minutes on each side.

Season with salt, pepper and paprika to taste.

just made these into baked balls.....

I pretty much followed the recipe but next time would use a little less oregano. I made them into balls and baked them. When cool I will freeze on a half pan and put them in a bag and take out a few when needed. Good diet food. Oh, I used chicken breasts and thighs fresh ground at my market.

 
This sounds so good! I bought two large bags of spinach for $1.50 at the farmers market, been

pondering how to cook them up and this sounds lovely! Thanks for sharing this!

 
I used my cast iron pan, a grill pan would work just as well...

btw I would consider cooking the spinach first to get the water out of it, I used frozen and drained it well.
