two different food questions for advice please...

I am making Randi's recipe for molten chocolate cakes from this site .... is there any reason I couldn't double this recipe? Would there be a problem baking 8 in the oven instead of 4? I did a trial run of four which turned out great - but for a dinner party I require 8.

Second question is regarding the Glazed Orange Hosin chicken from this site which I am making for our bookclub. Not sure if I will be able to find chili paste with garlic - is there a possible substitute?

this is certainly not a quick reply but perhaps this info. will be helpful to you in the future. Like you, I was on a mission to find the chili paste. None of the local grocery stores in our area carried it. I then decided to go to an oriental grocery store where the proprietor showed me "chili garlic sauce". I showed him the recipe and he assured me that they were the same. I purchased the Lee Kum Kee "Chili Garlic Sauce" and used it. Now when I am in the ethnic aisle in the grocery store I notice the chili garlic sauce. I also discovered that the sauce was significantly cheaper at oriental markets than in the grocery stores even though it was the same brand. Hope this helps!!

I don't think we have KMart in western Canada - but I can certainly find a good selection of asian products in both our grocery and asian stores. Thanks for your suggestion and for the link. You were very helpful!

You should have no problem doubling the molten cakes.

I make something similar, and I double them all the time.

Hey, not much can happen to them as long as you do not burn them

if something fails, do not say a word, just serve them with vanilla ice cream on top and pretend you have created something wonderful.
