Two margaritas I recently tested out: both are sweet and tart and full-on girlie. What!

Pink Cadillac Margaritas

(from Southern Living magazine, Aug 2012)

Ingredients
1 cup tequila
1 cup fresh lime juice
1/2 cup powdered sugar
1/2 cup orange liqueur (like Cointreau orange liqueur)
1/2 cup cranberry juice

Step 1
Stir together all ingredients until sugar is dissolved. Pour desired amount of mixture into a cocktail shaker filled with ice cubes. Cover with lid, and shake 30 seconds. Strain into chilled cocktail glasses. Repeat with remaining mixture.

Marilyn's Notes:
I was a bit worried about the powdered sugar because it usually contains corn starch (to avoid clumping). So I buzzed regular cane sugar in my Vitamix to make powdered sugar and used that. "Wholesome" powdered sugar does not have corn starch but I didn't have any left (product recommended by Stella Parks).

And, I had pomegranate juice (not cranberry) so that's what I used.

Also, I'm a bit of a wuss when it comes to booze, so I only used 1/2 C of tequila.

Also, if you shake the icy mixture for at least an HOUR, you will burn up a smidgen of the calories you're getting ready to drink.

Also, I never coat the rim of the glass with salt because it's my drink and and my taste buds and I don't like to be assaulted. I might be tempted to tint large-grind sugar pink if I knew how to do that. But I don't.)

(No pink elephants were spotted after drinking this)

 
Toasted Milk and Honey Margaritas

from "Smoke, Roots, Mountain, Harvest" by Lauren McDuffie

Ingredients:
1/2 C honey
1/2 C sweetened condensed milk
1 C water
1 tsp salt

Ice cubes
1/4 C silver tequila
2 TBL Grand Marnier
3 TBL fresh lime juice

Simmer first four ingredients until blended. Remove from heat and cool to room temperature. Leftover syrup can be refrigerated for 2 months.

Fill cocktail shaker with ice cubes, remaining ingredients and FIVE TBL of the syrup (less if you want it tarter). Shake until frothy and serve over ice (or not) immediately

This is meant to be drunk, but may optionally be bathed in ala Cleopatra.
I have no clue why the word TOASTED is used in the title. It does, however, make it sound more luscious.
I didn't have silver tequila and used 3 TBL of what I had (wuss, remember)

 
Yum! I could see a pitcher of this on the table for your future "sit around and nosh on appetizers"
