Two Wonderful Stuffed Egg recipes

REC: Goat Cheese and Herb Stuffed Eggs

6 hard boiled eggs
6 tablespoons mayonaise
2 oz. soft chevre, crumbled
2 tsp. minced shallot
1 tblsp. minced chives
1/2 tsp. each of tarragon, basil, and dill
dash of cayenne pepper

Combine. Garnish with more Chevre and sprinkle with more fresh herbs.

Optional. Add a couple spoonfuls of drained canned crab.

 
REC: Bacon and Bleu Cheese Stuffed Eggs

5 strips of smoked bacon, fried and crumbled
6 hard boild eggs
1/4 cup crumbled blue cheese or gorgonzola
1 clove garlic, minced
4 tbl sour cream
2 tbl mayonaisse
1 tbl. minced chives
dash of cayenne pepper

Reserve some bacon, blue cheese, and chives for garnish. Mix and stuff. Garnish.

 
Your timing is perfect! I just bought a 5-dozen box of eggs to practice with. I'd

planned on trying to make mayonnaise and a few other things. I'm adding deviled eggs to the roster!

Totally stupid question, but do you have a T&T technique for boiling the eggs?

 
Yes, I hate overdone boiled eggs...

Put eggs in cold water to cover. Slowly bring to a boil over low heat. When water boils, remove from heat, cover, and let sit 10 minutes. Immediately plunge eggs into ice water to stop cooking and cool.

Crack all over by tapping. Then gently roll around under your hand until the shell is ready to fall off.

If you want a soft-boiled egg for breakfast, reduce time to 4 minutes.

 
Exactly - perfect eggs everytime. And if you want the yolks centered (to avoid thin white edges)...

Gently stir the eggs with a wooden spoon as the water begins to heat and then boil.

 
Perfect. I love everything stuffed - and stuffed eggs have turned out to be a family
