unearthed this chocolate dipped lavender cookies recipe whilst looking for something else...

these are kinda posh and soooo good. the lavender/chocolate combo is surprisingly tasty.

1 cup unsalted butter, softened

1 cup sugar

1 egg, lightly beaten

1 1/2 cups self rising flour

1 Tbsp lavender flowers

8 oz semi-sweet chocolate (i used dark choc)

beat butter on med/high speed x 30 sec. add sugar & beat till combined. beat in egg. beat in flour and lavender. drop by tsps 2" apart on lined cookie sheets. bake @ 350 x 15-18 min till edges golden. cool.

melt chocolate (whatever technique you like). remove from heat and dip half of each cookie. set on parchment till choc is firm. makes 48.

Do you think you could freeze the flowers to use at a later date?

yup, a few times. they're a little more time consuming with the dipping, but they really

are worth it in the end. so far have only used lavender that i bought at a cool shop where i used to live (also where i got the cookbook), and it was dried, but many of the recipes in the book specify fresh lavender. they just say to peel off the florets from the sprigs. s'pose you'd use less dried than fresh... there are loads of recipes in this book - next ones on my list are lavender lemonade bars and lavender shortbread. good luck with the cookies, i hope you like them!

 
woops, didn't answer your other question. i haven't tried, but t they seem like the kind of

thing that would freeze well. or set them aside to dry. think i'll start that experiment this afternoon. thanks for the idea!

 
Thanks for the answers! I'm going to harvest some this next week

and dry and freeze it. Just don't have time right now to enjoy playing much in the kitchen but I will this fall.

I'd love to have any recipes out of that book that you try and love! smileys/smile.gif The shortbread sounds great, too and I'll bet they all are good.

My lavender is where I smell it every time I come in the back gate. It's wonderful!
