Unhappy with the refined things in Texas

I become sadder all the time that white corn seems to have replaced yellow in all the masa & tortillas now. I thought the yellow had a much more robust "cornier" flavor. I also don't much care for the sweeter taste. I was reminded of this yesterday at lunch. A friend & I went to a great little torta place that also makes real quesadilla's (masa molded around cheese & deep fried), huaraches & sopes. I got a quesadilla and would have loved it with yellow corn.

I did try something I've never had though and am racking my brain, I think it is called a panbazo. A torta (this one chorizo, potatoes, crema, cheese, etc.) the whole thing dipped in guajillo chile sauce before it is griddled. Very yummy & very messy.

 
I couldn't agree with you more Melissa! I've been complaining about this

for years but I just thought it was a Florida thing. When my hubby was traveling to Cal. or AZ. I would make him fill his suitcase with yellow corn tortillas to bring back for me. The white corn is just not the same. Sad....

 
Occasionally I can still find a small pack of store brand ones that are yellow. I think it changes

the way tamales taste too.

 
AND the produce dept seem to carry more of the "sweet" white ears of corn instead of the yellow.

I agree that the yellow corn tastes more corn-like than white.

 
In general I agree, although I sometimes like white for a smoother taste.

I never could use the blue corn tortillas, though. Food, except for blueberries, just should not be blue. smileys/smile.gif

I'll have to stock up on tortillas and such when I go to New Mexico next month.
