Update: Lava cakes were a bittersweet disaster:

...and it's my own fault.

I messed around with the recipe increasing it to fill the six wells in the "mutant cupcake" pan instead of the four cakes the recipe made. I did this so I wouldn't ruin the pan by heating the pan with some wells empty. I knew I couldn't use water because I had to dump the cakes out.

And I added extra chocolate because it called for 70% and I used 62%, so I added unsweetened. Anyway, isn't there some law of physics that says there can NEVER BE too much chocolate?

And I wonder if you're supposed to let them cool down before releasing from the pan, because they all collapsed under their own weight.

I won't be making this again any time soon.

Next time, put the water in the cupcake pans and then suck it out with your turkey baster. . .

It is good to hear that other people do what I do--mess around with recipes! Good luck next time!

Ah, see, I didn't think of that. Actually, I was surprised that I actually considered the water/flip

issue first. I usually realize my mistake as I doing it!

Or you could line the empty pans with plastic wrap and fill with dried beans...

fold over the plastic wrap and you will have little bean packages. The wrap molds around the beans. I have a big package I reuse for pie crusts.
