Update on Big Bend Camping Trip.

Well, all the men are back. I feel like a neophyte. Thirteen guys go out to Terlingua and camp every year and take their BMW dirt bikes to ride in the desert. This is no wieners and baked beans event. I thank everyone for your recipes for cajun. I ended up making chili because another person made Chicken and Sausage Gumbo. One person is a chef and he made rack of lamb!!! I made 5 gallons of chili and put it in a foam ice chest with a block of dry ice and it was still partially frozen when it was reheated 5 days later. (place tape around the seal). Also on the menu was green chili stew and homemade tamales. The tortillas that I sent with the chili were stolen by a pack of skunks so the guys had to eat crackers. My chili turned out really well. I used chili meat and venison in a two to one ratio. Only one guy crashed and broke 3 ribs. I guess he felt better once they got him back to camp and they all made lattes in an electric machine run by a generator. I am not making fun, these guys are tough in their 50's and 60's and it was in the 90's. Very beautiful and barren. Javelinas all over the place. Escondida had a little mexican food joint (right on the border) where they ate green enchiladas with white cheese that were so hot that you sweat. It is slower different life out their. It took 20 mins. to get the beer to wash down the enchiladas. I'm glad I stayed home.
