Update on Italian Pastry Team - I am SO BLOWN AWAY!!!

Yesterday they took all the pieces they had worked on since Friday and assembled them. OMG - I am dying to share the pix but I don't want to do anything until after the competition.

So here's where we stand. They were going to move to Opryland Hotel today but decided to keep working in the school's kitchen until Saturday (so much for having any actual production classes this week - school started yesterday). So today I had to locate a small box truck with a lift gate because we won't be able to use the school's tow motor since it has to be run by a licensed tow motor driver and they don't work on Saturdays for sure. Found two places and one won't rent to individuals. So I have that booked for Saturday morning.

I go to my advanced baking class tonight (this isn't going to be particularly easy) and we walked through the kitchen and saw some additional pieces under construction - one piece looks like green coca-cola glass like a small podium or stand but all modern. Then we went to the photography studio because it was he only place tall enough to fully assemble the pieces.

THEY WERE INCREDIBLE!!! But as we got closer - the pulled sugar piece had broken bits around it and as you looked closely you could see seams and such. And the pieces that were so beautiful and like shiny glass pieces by David Chihuly were cloudy - like a little kid had put his sticky fingers all over them. Several things were at work on it - the humidity was starting to affect the finish on the pieces - they have been making them since Friday so I don't know how long it will hold up but it should hold up for their competition since they have to make the pieces on Sunday and Monday in 13 hours. And then, the crazy part. They put the pulled sugar piece RIGHT under an HVAC grille. When it came on, it was enough of a wind to rattle it and shake pieces off and as they tumbled they hit other even more fragile pieces ad broke them. So lesson learned - if you are ever doing a fancy piece (Marilyn - think gingerbread house here) - pay attention to where you put it - watch for HVAC vents!

The chocolate piece was perfection and several of the students argued with me that parts of it weren't chocolate even though I had been there when they molded, assembled and airbrushed the pieces. (The dip s*** that was in my last class and is a real slacker with an attitude - she was the ONLY one in the class that didn't gel with the rest of the class, showed up late, talked about how hard it was to be a working mom and how her boyfriend expected her to bring him the leftovers for supper and such - give me a freaking break girl!)

Anyway, maybe they will take a little time to relax beween now and Saturday. Fabrizio is trying to get to the Apple store - he wants an iPod and an iPhone. I'll be MORE than happy to take him to the Apple store!!!

 
Yes - when the hvac turned on, the pulled sugar piece had a problem

and one piece broke off and a it tumbled down, took other parts and pieces with it. When Ipost pictures you'll see what I mean. But it's so fragile that it didn't take much. But OMG - I showed pix to a couple of people at work and they were just as breathless as I was.
