Update on Peach Bundt Cake several days later....it's gotten BETTER!

I made this bundt cake last Thursday, iced it on Friday, tasted it (meh), took half to the library and tossed the rest in the refrigerator. Today (Tuesday) I cut a quarter off for the neighbor and tasted a skinny slice when I got back home.

It's definitely tastier now...the cake has more flavor, it's moister and the peach chunks provide a definitive profile. This is definitely a cake you need to make ahead of time and let ripen.

So glad to hear that your cake got a second chance. When I'm not immediately bowled away, I usually toss because Dh will eat cake even if it isn't worth eating. Colleen

 
Okay. I dumped the idea after your original "meh", but now I'll put it back on. Just like the pear

cake, I let it sit in the fridge for at least a week.
